...that minced beef contains enough of the necessary components to irretrievably caramelise itself if cooked at too high a temperature?

Neither did I.

Hopefully the pork fillet that was to be tomorrow's dinner has been marinading for long enough that I can do it tonight and have it taste of spiced apples rather than raw spice and cider. Less than twenty-four hours - might be lucky.

These kinds of things I find exquisitely annoying - in case you hadn't already guessed.
